Forever Young with Tom Yum Goong

Forever Young I want to be, which is why I eat seaweed.  

Seaweed is not only highly nutritious it contains antioxidants which reduce inflammation and slows down aging.  Looking young means keeping your skin looking healthy and beautiful and seaweed is the best way to do it.  As I like to say, a spoonful of seaweed a day keeps the aging away.

Seaweed is not only good for aging skin, it is highly beneficial for all skin and it is usually the first food that I will recommend for anyone trying to heal a difficult skin condition, be it acne, eczema or psoriasis.

The most important food in my approach to eating healthy is seaweed, so I am constantly on the lookout for recipes which blend easily with this strong fishy flavored food.

Asian food is always super easy and blends beautifully with seaweed, especially if it is a fish dish already. The addition of coconut milk as well easily hides the strong flavor of the seaweed.

Here is a super quick and easy soup which uses lemongrass, one of my favorite spices. I prefer to make it vegan and so I use vegetables to replace the fish.  My vegetable of choice is broccoli but feel free to exchange it with whatever you have on hand.


Ingredients:

  • 250 gr. Mushrooms, straw or button
  • 1 head broccoli, chopped into bite size pieces
  • 2 tomatoes finely chopped
  • 1 stalk lemongrass
  • 4 slices galangal or ginger
  • 4 kaffir lime leaves
  • 1 onion, chopped
  • 1 package cilantro, roughly chopped
  • 1 package basil, roughly chopped
  • 5 scallions, chopped into 1” pieces
  • 1 chilli pepper, finely chopped
  • 1 tsp wakame seaweed, soaked and then squeezed
  • 2 liters boiled water
  • 1 cup coconut milk
  • Juice of lime to taste

Place all the ingredients in a pot.  Add the boiling water.  Bring everything to a boil.  Remove from the flame and serve.  Serves 4
